The olive oil is a blend of several cultivars: predominantly the French Picholine du Languedoc at 80%, complemented by a selection of local Moroccan varieties including Picholine Marocaine, Menara, Haouzia, and Dahbia, as well as the Tunisian Chemlali. This carefully curated mix of olives comes from an old centenary orchard, adding depth and a historical touch to every bottle.
Located in the picturesque Marrakech region, the olive grove spans over 30 hectares (approximately 74 acres) and sits at an altitude of 390 meters above sea level. The soil composition—30% clay, 35% muddy/loamy, and 35% sandy—provides a well-balanced foundation for the olive trees, contributing to the unique taste and quality of the oil.
The production process adheres to the highest standards of excellence. The olive trees, pruned in a cup shape, are part of an old centenary orchard, with a density of 100 trees per hectare. This orchard produces around 25,000 liters of olive oil each season, boasting a remarkably low maximum acidity of 0.4° when bottled.
The harvest takes place from the end of September to the end of November. The oil is extracted using a first cold-pressed method at a maximum temperature of 26°C, employing an ecological 2 phases continuous system. This method ensures the preservation of the oil’s natural flavors and nutritional properties. The yield varies between 10.5% to 13%, reflecting the careful selection and quality of the olives.
